    2/3 cups shortening
    1 1/4 cups sugar
    4 eggs
    3 1/2 cups al purpose flour
    2 1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 1/2 cups mashed ripe bananas (about 4 medium)
    2 cans crushed pineapple (8 ounces each) well drained
    2 cups semisweet chocolate chips (12 ounces)
    1 jar red marachino cherries (10 ounces) well drained and chopped
    1 cup chopped walnuts

    Preheat oven to 350 F. Grease and flour two 9 x 5 x 3 inch loaf pans. In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with the bananas and the pineapple. Fold in the chocolate chips, cherries, and walnuts.

    Pour into the prepared loaf pans. Bake for 60-65 minutes at 350 F or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire racks. Yield: 2 loaves
