Banana: Banana Bran Bread

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
3 mashed ripe bananas
1 1/2 cups POST 100% Bran Cereal
1/4 cup water
2 tablespoons oil
1 teaspoon vanilla
Recipe
Heat oven to 350ºF. Mix flour, sugar, baking powder, baking soda and salt in large bowl. Beat egg in medium bowl; stir in bananas, cereal, water, oil and vanilla. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Pour into 9x5-inch loaf pan which has been sprayed with no stick cooking spray. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Makes 18 (1/2-inch) slices. NOTE: For easier slicing, wrap bread and store overnight.
