    Submitted by: Kelly Wilganowski"This is the best banana nut bread I have ever made! So full of flavor. I double the recipe and give it as gifts. Everyone seems to appreciate it." Yields 1 - 9x5 inch loaf.

    List of Ingredients




    1/2 cup shortening
    3/4 cup white sugar
    2 eggs
    1 cup mashed bananas
    1 teaspoon vanilla extract
    1 1/2 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup quick cooking oats
    1/2 cup chopped walnuts 

    Recipe



    1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

    2 In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.

    3 In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.

    4 Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.Makes 12 servings


    Reader's comments: I tweeked the recipe a little, at the suggestion of some other readers. I used 1 1/2 cup of RIPE bananas. I also added 1/2 tsp cinnamon to the batter. As a finishing touch, I mixed a tsp of cinnamon, 1/2 tsp of sugar and about 1/4 cup of oatmeal flakes and then sprinkled them on the top. It is delicious and moist!
