    2 cups all-purpose flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    1/8 teaspoon nutmeg
    2 beaten eggs
    1 1/2 cups mashed RIPE bananas (about 5 medium)
    1 cup granulated sugar
    1/2 cup cooking oil
    1 teaspoon finely shredded
    fresh lemon peel
    1/4 cup chopped walnuts

    Recipe



    1. Grease bottom and only 1/2-inch up sides of a 10 x 5 x 3-inch loaf pan; set aside. Combine flour, baking powder, soda, salt , cinnamon and nutmeg. Make well in center of dry mixture. Set aside.
    2. Combine eggs, bananas, sugar, oil, and lemon peel. Add egg mixture all at once to dry mixture. Stir until moistened (do not overmix). Batter should be lumpy. Fold in nuts.

    3. Spoon batter into prepared pan. Bake in pre-heated 350 degree oven 55 to 65 minutes or until a wooden pick inserted near center comes out clean. (If necessary, cover with foil for last fifteen minutes of baking to prevent overbrowning). Cool in pan on wire rack for ten minutes. Remove from pan. Cool completely on wire rack . Wrap and store over night at room temperature before slicing and serving.

    Streusel Topping

    Prepare as above, EXCEPT combine 1/3 cup packed brown sugar and 1/4 cup all-purpose flour. Using a pastry blender, cut 2 tablespoons cold unsalted butter until mixture resembles coarse crumbs. (This must be of sprinkling consistency). Stir in 1/4 cup of finely chopped walnuts. Sprinkle over batter before baking.
