Banana: Banana Tofu Bread

2 3/4 cups flour
2 teaspoons baking soda
3/4 cup butter, softened
1 1/2 cups sugar
1/2 cup mashed tofu
2 1/2 cups mashed ripe bananas
1/2 cup nonfat plain yogurt
1 teaspoon pure vanilla extract
Recipe
Tofu replaces eggs in this recipe, reducing cholesterol considerably. Preheat oven to 350ºF. Spray two 9x5 inch loaf pans with cooking spray. Into a small bowl, sift together flour and baking soda; set aside. In a large bowl, beat butter and sugar with an electric mixer until light and creamy. Add tofu, bananas, yogurt and vanilla and beat until smooth. Add flour mixture to banana mixture and beat until combined, about 1 minute. Pour batter into prepared pans and bake about 60 minutes or until wooden pick inserted into loaf comes out clean. Cool in pan for 10 minutes, then turn out onto wire racks to finish cooling. Makes 2 loaves.
