Chocolate: Buttermilk Chocolate Bread

1 cup sugar
1/2 cup butter, softened
2 eggs
1 cup buttermilk
1 3/4 cups flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chopped nuts

Note: to substitute for buttermilk, use 1 tbl. vinegar or lemon juice plus milk to make 1 cup. Heat oven to 350ºF. Grease bottom only of 8x4 or 9x5 inch loaf pan. In lare bowl, combine sugar and butter, blending thoroughly. Add eggs and mix well. Stir in buttermilk. Add flour, cocoa, baking powder, baking soda and salt. Stir just until dry particles are moistened. Stir in nuts. Pour into greased pan. Bake at 350ºF for 55-65 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan; cool completely befoe slicing. Serves 12.
Chocolate Honey Butter: 1/2 c. butter, softened, 2 tbl. honey, 2 tbl. chocolate syrup; In small bowl, combine all ingredients. Beat at highest speed until light and fluffy. Makes 1 cup.
