    Chocolate Almond Zucchini Bread

    3 eggs
    2 cups sugar
    1 cup vegetable oil
    2 1-ounce squares unsweetened   chocolate, melted
    1 teaspoon vanilla extract
    2 cups grated zucchini
    3 cups self-rising flour
    1 teaspoon ground cinnamon
    1 cup chopped almonds

    Recipe



    Preheat oven to 350°F.  Spray 2 9x5-inch loaf pans with non-stick vegetable spray. In a large mixing bowl, beat eggs until lemon-colored.  Beat in sugar and oil until blended.  Stir in melted chocolate, vanilla, and zucchini.  Add flour and cinnamon; stir until blended.  Stir in almonds.  Pour into prepared loaf pans. Bake for 1 hour and 20 minutes or until a tester inserted in the center comes out clean.  Cool in loaf pans for 20 minutes.  Remove from pans; cool completely on a wire rack.
