Coconut and Banana Bread

1 1/3 cups flaked coconut
2 3/4 cups flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon grated orange peel
1 egg
1 1/2 cups mashed bananas

Sprinkle flaked coconut into a dry skillet over medium heat and cook, stirring or shaking the pan frequently to prevent burning, until lightly browned; cool. Preheat oven to 350ºF. Meanwhile, into a bowl sift together flour, sugar, baking powder and salt. Stir in grated orange peel and the coconut. In a small bowl combine egg, mashed bananas, and milk. Add to the dry ingredients and stir until just moistened. Pour into a well-greased and floured loaf pan. Bake for 1 hour and 10 minutes, or until the center is set. Cool in the pan for 10 minutes before turning out on a wire rack to cool completely.
