    Cranberry: Cranberry Honey Oatmeal Bread

    1-1/2 cups honey
    2/3 cup vegetable oil
    4 eggs, lightly beaten
    1 cup orange juice
    2 tablespoons grated orange rind
    2 teaspoons ground cinnamon
    4 cups self-rising flour
    4 cups rolled oats
    1 cup chopped walnuts
    4 cups cranberry sauce
    Cranberry-Honey Butter (below)

    Preheat oven to 350°F.  Spray 2 9x5-inch loaf pans with non-stick vegetable spray.
    In a large mixing bowl, combine honey, oil, eggs, orange juice, orange rind, cinnamon, flour, oatmeal, walnuts, and cranberry sauce; mix until just blended.  Pour into prepared loaf pans.
    Bake 55 to 65 minutes or until a tester inserted in the center of the loaves comes out clean.  Cool in pans for 10 minutes.  Remove from pans; cool completely on a wire rack.

    CRANBERRY-HONEY BUTTER
    1/2 cup butter or margarine, softened
    1/3 cup honey
    1/4 cup cranberry sauce
    In a small bowl, combine all ingredients; beat until creamy.  Serve with sliced bread.
