    Cranberry: Cranberry Orange Cheese Bread

    2 cups self-rising flour
    1 cup sugar
    2 tablespoons grated orange rind
    3 tablespoons butter or margarine, cut into small pieces
    1-1/2 cups shredded Cheddar cheese
    1 cup cranberries
    1 egg, lightly beaten
    3/4 cup buttermilk

    Preheat oven to 350°F.  Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a large mixing bowl, combine flour, sugar, and orange rind.  Cut in butter until mixture resembles coarse crumbs.  Add 1 cup cheese and cranberries.  In small bowl, beat egg into buttermilk; add to flour mixture, stirring until just moistened.  Spoon into prepared loaf pan.  Sprinkle with remaining cheese. Bake 1 hour or until loaf is golden brown and begins to pull away from the sides of the pan.  Cool in pan for 10 minutes.  Remove from pan; cool completely on a wire rack.
