Date: Date Carrot Tea Bread

List of Ingredients
1 cup chopped dates
2 cups grated carrots
3/4 cup flaked coconut
1/2 cup chopped nuts
2 cups sifted flour
1/2 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup shortening
3/4 cup brown sugar
2 eggs
Recipe
Mix together dates, carrots, coconut and nuts. Sift together dry ingredients. Cream shortening and sugar. Beat in eggs. Stir in dry ingredients. Add date mixture. Mix until well blended and turn into a greased loaf pan; bake at 350ºF for 1 hour.
