Banana: Double Ginger Banana Bread

3/4 cup packed light brown sugar
1/2 cup soft margarine
1/2 cup tofu, drained and pureed (4 oz)
2 teaspoons vanilla
1 cup mashed ripe banana (2 medium)
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground allspice
2 tablespoons finely chopped candied ginger
1/2 cup chopped nuts
Recipe
Preheat oven to 350ºF. Spray a 9x5 inch loaf pan with cooking spray. Beat brown sugar and butter in medium bowl until light and fluffy. Beat in tofu, vanilla and bananas until combined. Stir together flour, baking soda, salt, ground ginger and allspice in another bowl. Add flour mixture to banana mixture and stir just until combined. Stir in candied ginger and nuts. Spoon batter into prepared loaf pan. Bake abuot 45 minutes or until center springs back when lightly pressed. Cool in pan 10 minutes and turn out on a wire rack to finish cooling.
