    Eggnog: Eggnog Quick Bread

    2 eggs
    1 cup eggnog (not canned)
    2 teaspoons rum extract
    2 1/4 cups flour
    1/2 teaspoon salt
    1 cup sugar
    1/2 cup butter
    1 teaspoon vanilla
    2 teaspoons baking powder
    1/4 teaspoon ground nutmeg

    Recipe

    Preheat oven to 350ºF. Grease bottom only of 9 x 5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, butter, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 40 minutes to 1 hour or until cake tester inserted in center comes out clean. Cool for 10 minutes. Remove from pan. Cool completely. Wrap tightly and store in the refrigerator.
