    Banana: Ginger Banana Quick Bread

    List of Ingredients

    1 1/2 tablespoons grated fresh ginger
    1 tablespoon fresh lemon juice
    1/2 teaspoon grated fresh lemon peel
    1 cup finely mashed ripe banana (3 medium)
    1/4 cup milk
    1/2 cup flaked coconut or finely chopped nuts
    2 1/4 cups sifted flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt
    1/2 cup shortening
    3/4 cup sugar
    2 large eggs

    Recipe

    Peel skin from ginger with vegetable paring knife or small sharp knife; grate ginger finely. Combine with lemon juice and peel, banana, milk and coconut or nuts. Resift flour with baking powder, baking soda and salt. Cream shortening and sugar until blended. Add eggs and beat until fluffy. Add sifted dry ingredients alternately with ginger mixture, beating to a smooth, thick batter. Turn into a greased loaf pan, 9x5x3". Let stand while preparing Ginger-Sugar.

    Sprinkle mixture over the top of batter. Bake on first rack below oven center at 350ºF for about 50 to 55 mins., until loaf tests done. Remove from oven, let stand in pan 5 mins. then turn out onto wire rack to cool. Serve plain or with Ginger-butter.

    GINGER-SUGAR: Using a fork, toss 2 Tblsp sugar with 2 tsp finely grated fresh ginger.
    GINGER-BUTTER: Beat 1/2 cup softened butter with 1 tsp grated fresh ginger.
