Citrus: Lemon Bread

1 1/2 cups flour
1 cup shortening
1 cup sugar
3/4 cup sugar
1/2 cup milk
2 eggs
1 teaspoon baking powder
grated rind of 1 lemon
juice of 1 lemon
1 pinch salt
Recipe
Cream the shortening, milk and eggs together in a large mixing bowl. Then add the 1 cup of sugar, baking powder and salt followed by gradually adding the flour. Finally, fold in the grated lemon rind. Bake in a greased and floured bread pan for 45 minutes at 350ºF. While the bread is still hot from the oven, combine the lemon juice with the 3/4 cup sugar and spoon the mixture onto the loaf. Allow to cool before removing from the pan. * Variation: You can add in poppy seeds or grated orange peel for a slightly different flavor.
