Zucchini: Lemon Zucchini Bread

1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
1 medium zucchini, shredded
1 teaspoon grated lemon peel
1/2 cup chopped walnuts
Recipe
Preheat oven to 350ºF. Spray an 8x4x2 inch loaf pan with cooking spray. In medium bowl, combine flour, sugar, baking powder and salt. In large bowl, mix eggs, oil, zucchini and lemon peel; stir in flour mix just until moistened. Stir in walnuts. Pour into prepared pan. Bake for 1 hour or until toothpick comes out clean. Cool in pan for 10 minutes, then remove to wire rack to cool completely.
