Zucchini: Lemon Zucchini Bread

1 1/2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
1 medium zucchini, shredded
1 teaspoon grated lemon peel
1/2 cup chopped walnuts
Recipe
Preheat oven to 350�F. Spray an 8x4x2 inch loaf pan with cooking spray. In medium bowl, combine flour, sugar, baking powder and salt. In large bowl, mix eggs, oil, zucchini and lemon peel; stir in flour mix just until moistened. Stir in walnuts. Pour into prepared pan. Bake for 1 hour or until toothpick comes out clean. Cool in pan for 10 minutes, then remove to wire rack to cool completely.
