Pumpkin: Lowfat Pumpkin Bread

1 can unsweetened pumpkin
1 cup sugar
1 3/4 cups flour
3/4 tablespoon baking soda
1 teaspoon baking powder
2 cups raisins
2 egg whites
1 cup applesauce
cinnamon, ginger and nutmeg to taste
Recipe
Sift together dry ingredients. In separate bowl, blend together wet ingredients. Blend all and pour into a large or 2 medium loaf pans sprayed with cooking spray. Bake at 350ºF till toothpick somes out clean. Can add more sugar if desired to heighten sweetness, also can toss in some chopped walnuts if desired. Cool loaf and wrap tightly in plastic wrap.
