    Banana: Lowfat Yogurt Banana Bread

    List of Ingredients

    3 1/4 cups flour
    2 teaspoons baking soda
    3/4 cup butter, softened
    1 1/2 cups fructose or table sugar
    3 cups mashed ripe banana
    1 cup egg whites or egg substitute
    3/4 cup nonfat plain yogurt

    Recipe

    Preheat oven to 350ºF. Spray three 9x5 inch loaf pans with cooking spray. Into a small bowl, sift together flour and baking soda; set aside. In a large bowl, beat butter and sugar with an electric mixer until light and creamy, about 2 minutes. Add bananas, egg whties and yogurt, beating until smooth. Add flour mixture to bananas and mix until well blended, about 1 minute. Pour into prepared loaf pans. Bake 60 minutes or until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then turn out onto wire rack to cool. Cut into slices. Makes 3 loaves.
