Mom made this every year around holiday time. The recipe is an old stand-by
List of Ingredients
2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 1 pound can pumpkin
2/3 cup water
3 1/3 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
Recipe
Heat oven to 350ºF. Grease 2 loaf pans. In large bowl, cream shortening and sugar til fluffy. Stir in eggs, pumpkin and water. Blend in dry ingredients. Pour into pans and bake about 70 minutes or until toothpick inserted in center comes out clean. Yield: 2 loaves.
