    Citrus: Orange Oat Bread

    List of Ingredients

    grated rind of 2 oranges (1/4 c.)
    1 cup orange juice
    1 1/4 cups sugar
    1 cup milk
    1 egg, beaten lightly
    2 cups flour
    1 cup rolled oats
    1 tablespoon baking powder
    1/2 teaspoon salt

    Recipe

    Preheat oven to 350ºF. In medium saucepan, bring the rind and juice to a boil over medium high heat. Reduce heat to medium low and simmer, uncovered, for 5 minutes. Add the sugar, stirring until dissolved. Increase the heat to medium high, and bring the mixture to a boil; cook, stirring occasionally, until syrup threads form on the tip of the spoon when lifted, 5-7 minutes. Remove from heat and let cool to room temp.

    Whisk the milk and egg into the syrup until well blended. Combine the flour, oats, baking powder and salt in a large bowl. Add the liquid and stir until batter is just combined - do not overmix. Pour batter into buttered and floured 9x5 loaf pan. Bake for 55-60 minutes or until toothpick inserted in center comes out clean. Let cool upright in the pan for 10 minutes, then turn onto a wire rack to cool completely. Is especially good with cream cheese. Makes 1 loaf. Can freeze up to 3 months or refrigerate up to 2 weeks.
