Pear: Almost Perfect Pear Bread

2 cups self-rising flour
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 egg
2 egg whites
1/2 cup firmly packed brown sugar
2 tablespoons vegetable oil
1/4 cup honey
3 tablespoons applesauce
1 teaspoon grated lemon rind
1 cup chopped pears
3/4 cup raisins Recipe
Preheat oven to 350°F. Spray a 9x5-inch loaf pan with non-stick vegetable spray. In a medium bowl, combine flour, cinnamon, and cloves; set aside. In a large mixing bowl, combine egg, egg whites, brown sugar, and oil; beat until smooth. Add honey, applesauce, and lemon rind; beat until well blended. Stir in flour mixture, pears, and raisins until just blended. Pour batter into prepared loaf pan. Bake 40 to 50 minutes or until a tester inserted in the center comes out clean. Cool in loaf pan for 10 minutes. Remove from pan; cool completely on a wire rack.
