3 cups flour
1 tablespoon + 1 tsp. baking powder
1 teaspoon salt
1 large egg
3/4 cup sugar
2 tablespoons oil
1 1/2 cups milk
1 cup chopped pecans
Recipe
Grease and flour a 9x5 inch loaf pan; set aside. Combine flour, baking powder and salt in small bowl; set aside. Combine egg, sugar and oil in large mixing bowl; beat at medium speed of an electric mixer until blended. Add flour mixture to sugar mixture alternately with milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in pecans. Pour batter into prepared pan; allow batter to rest for 20 minutes. Preheat oven to 350ºF. Bake for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes, then turn out onto wire rack and let cool completely. Makes 1 loaf.
