Pineapple Nut Bread

3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
4 large eggs, lightly beaten
2 1/2 cups well drained crushed pineapple
1 1/4 cups oil
1 cup chopped macadamia nutsRecipe
Preheat oven to 350ºF. Grease and flour two 9x5 inch loaf pans; set aside. Combine flour, baking soda, salt and sugar in a large bowl; make a well in center of mixture. Combine eggs, pineapple and oil; add to flour mixture, stirring just until dry ingredients are moistened. Stir in macadamia nuts. Pour batter into prepared pans. Bake for 45-55 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; turn out onto wire racks and let cool completely. Makes 2 loaves. Wrap in plastic wrap after cooled and store in fridge until ready to serve.
