Pumpkin: Pumpkin Bread Light

2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
cinnamon and nutmeg to taste
1/2 cup egg substitute
3/4 cup brown sugar
2 tablespoons apple juice or cider
1 teaspoon vanilla
2 cups puree pumpkin (15 oz can)
1/2 cup chopped pecans (optional)
Recipe
Preheat oven to 350ºF. In a large bowl sift together dry ingredients. In a smaller bowel beat together egg substitute, sugar, vanilla and apple cider. Add liquids to dry ingredients and stir until well combined. Add pumpkin and nuts and combine until fully incorporated. Pour into non-stick loaf pans or pans lightly sprayed with cooking spray and floured. Bake for 50 to 60 minutes (less time if making muffins or cupcakes) or until toothpick inserted in center comes out clean.
