    Pumpkin: Pumpkin Pecan Bread

    List of Ingredients

    1 2/3 cups flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1 1/4 cups sugar or fructose
    1/3 cup oil
    1/2 cup egg substitute
    1/3 cup apple juice
    1 1/4 cups canned pumpkin
    1/2 cup chopped pecans

    Recipe

    Preheat oven to 350ºF. Spray a 9x5 inch loaf pan with cooking spray. In a small bowl, sift together the flour, baking soda, salt, cinnamon and nutmeg; set aside. In a large bowl, beat sugar, oil, egg whites, apple juice, and pumpkin with an electric mixer until light and creamy, about 1 minute. Add flour mixture and pecans to pumpkin and stir until thoroughly incorporated. Pour into prepared loaf pan. Bake 60 minutes or until a wooden pick inserted in center of loaf comes out clean. Cool in pan for 10 minutes, then turn out onto wire rack to finish cooling. Makes 1 loaf.
