    Banana: Sour Cream Banana Bread with Glaze

    List of Ingredients

    1/4 cup butter, softened
    1/2 cup sugar
    1 egg
    1/2 cup sour cream
    1/2 teaspoon vanilla
    1 cup flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1 banana, coarsely mashed
    1/2 cup semisweet chocolate chips
    1/2 cup chopped walnuts

    SOUR CREAM GLAZE:
    1 tablespoon sour cream
    1/4 cup sifted powdered sugar
    1/4 teaspoon vanilla
    2 teaspoons finely chopped walnuts

    Recipe

    Preheat oven to 350ºF. Grease two 6x2 inch foil loaf pans. In the large bowl of an electric mixer, beat together butter, sugar, egg, sour cream and vanilla until mixture is blended. Add flour, baking powder and baking soda all at once, and beat until blended - do not overbeat. Stir in banana, chocolate and walnuts. Divide mixture between the two loaf pans.

    Place pans on a cookie sheet and bake in a 350ºF oven for 35-40 minutes or until a cake tester, inserted in center, comes out clean. Allow to cool in pans for 10 minutes, and then remove from loaf pans and continue cooling on rack. Brush tops lightly with glaze (for glaze stir together all ingredients until blended). Yields 2 loaves. Can wrap in double thickness of plastic wrap and then foil, and freezes well.
