Zucchini: Spiced Zucchini Bread

3 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground nutmeg
3 large eggs, lightly beaten
2 cups sugar
1 cup oil
1 teaspoon vanilla
2 cups finely shredded zucchini, blotted dry
3/4 cup chopped walnuts
8 ounces crushed pineapple, drained
Recipe
Preheat oven to 350ºF. Grease and flour two 9x5 inch loaf pans; set aside. Sift flour, baking soda, baking powder, salt, cinnamon and nutmeg in to a large bowl. Combine eggs and sugar, oil and vanilla; stir well with a wire whisk. Stir in zucchini, walnuts and pineapple. Add zucchini mixture to flour mixture, stirring just until dry ingredients are moistened. Pour batter into prepared pans. Bake for 1 hour or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes, then turn out onto racks to cool completely. Makes 2 loaves.
