    Sweet Potato: Sweet Potato Nut Bread

    2-1/2 cups sugar
    2/3 cup vegetable oil
    4 eggs
    1-16-ounce can sweet potatoes or yams, drained
    2/3 cup water
    3 1/2 cup all-purpose flour
    2 teaspoon baking soda
    1 1/2 teaspoon salt
    1 teaspoon ground cinnamon
    1 teaspoon ground cloves
    1/2 teaspoon baking powder
    1 cup chopped nuts

    Heat oven to 350 grease bottoms only of two loaf pans 9x5x3 inches. Mix sugar, oil, eggs, sweet potatoes, and water in large bowl stir in remaining ingredients. Pour into pans. Bake until wooden pick inserted comes out clean about one hour ten minutes, cool slightly loosen sides of loaves from pans remove from pans. Cool completely. Makes 2 loaves.
