    List of Ingredients

    1 cup nonfat buttermilk or fat free yogurt
    2 large eggs, lightly beaten
    2 tablespoons prune puree or unsweetened prune baby food
    1/2 cup packed dark brown sugar
    2 cups whole wheat flour
    1 teaspoon baking soda
    1 cup dates, chopped
    1 cup walnuts, chopped
    2 teaspoons grated orange zest

    Recipe

    Heat oven to 350ºF. Lightly grease a 9x5 inch loaf pan. In mixing bowl, combine buttermilk, eggs, prune and brown sugar until smooth. In separate bowl, combine flour and baking soda with a whisk. Pour wet ingredients into flour mixture and stir just until everything's moist, about 30 seconds. Fold the dates, walnuts and orange zest into the batter. Pour the batter into the prepared loaf pan. Bake until a toothpick inserted in the center of the loaf tests clean, about 40 minutes. Let pan cool on cooling rack for 10-15 minutes before removing the bread. To store, let the loaf cool completely on the rack. Seal it inside a plastic bag, and refrigerate up to 4 days, freeze up to 6 months.
