    1 envelope active dry yeast
    1/4 cup lukewarm water (105°F)
    1 teaspoon sugar
    1 cup cottage cheese
    1 tablespoon sugar
    1-1/4 teaspoons salt
    1 egg
    2-1/4 cups bread flour
    1 tablespoons butter or margarine, softened
    1 cup shredded Cheddar cheese
    Melted butter or margarine

    In a large mixing bowl, dissolve yeast in water with sugar; let stand until foamy, about 5 minutes.  Add cottage cheese, sugar, salt, and egg; beat until blended.  Add flour, 1/2 cup at a time, beating until a stiff dough forms.  Cover; let rise in a warm, draft-free place until doubled, about 1 hour.

    Spray a 1-1/2 quart casserole with non-stick vegetable spray. Stir dough down; stir in cheese.  Turn into prepared casserole.  Cover; let rise for 40 minutes. Preheat oven to 350°F. Bake 40 to 50 minutes or until golden brown.  Brush top with melted butter. Makes 1 loaf
