Rolls: Oatmeal Rolls

2 1/3 cups water
1 cup dry oatmeal
3 tablespoons butter
2 packages dry yeast
2/3 cup packed brown sugar
1 tablespoon sugar
1 1/2 teaspoons salt
5 cups flour (to 5 3/4 c.) Recipe
In saucepan bring 2 c. water bo a boil; add butter and oatmeal, simmer 1 minute. Remove to a large mixing bowl and let cool to about 120¼F. Heat 1/3 c. water to warm and add yeast; dissolve. To oatmeal mixture, add brown sugar, white sugar, salt, yeast and half of the flour. Mix well. Add remaining flour, enough to make a soft dough. Turn out onto a floured board and knead 6-8 minutes or until smooth and elastic; add more flour as needed. Place dough into greased bowl, turning once to grease top. Cover and let rise until double in size, about 1 hour. Punch dough down and divide in half; shape each half into 12 balls. Place 1" apart on two greased 9x13 inch baking pans. Cover and let rise until double in size, about an hour. Bake at 350¼F for 20-30 minutes. Makes 24 rolls.
