    3 cups rolled oats
    3 cups boiling water
    6 tablespoons butter or margarine
    6 tablespoons honey
    2 tablespoons brown sugar
    4 teaspoons salt
    1 cup raisins
    1 envelope active dry yeast
    1/4 cup lukewarm water (105°F)
    1 teaspoon sugar
    4 eggs beaten
    7 cups bread flour (7 to 8)
    1 cup sugar
    2 tablespoons ground cinnamon
    1/4 teaspoon ground nutmeg
    1/4 cup butter or margarine melted

    Grease a large bowl; set aside. In a large mixing bowl, combine oats and boiling water; stir in butter, honey, brown sugar, salt, and raisins.  In a small bowl, dissolve yeast in water with sugar; let stand until foamy, about 5 minutes.  Add dissolved yeast, eggs, and 2 cups flour to oatmeal mixture; beat until smooth.  Stir in enough remaining flour to make a soft dough.  Turn out onto a well floured board; knead 8 to 10 minutes until smooth and elastic.  Place in prepared bowl; grease top lightly.  Cover; let rise in a warm, draft-free place until doubled, about 1 hour.

    Spray 2 9x5-inch loaf pans with non-stick vegetable spray. In a small bowl, combine sugar and spices; set aside.

    Punch dough down; knead briefly.  Divide dough in half.  On a lightly floured board, roll each piece into an 8x12-inch rectangle.  Brush each piece with melted butter; sprinkle with spice mixture.  Starting at a narrow edge, roll up jelly-roll fashion; pinch seams to seal.  Place, seam-side down, in prepared loaf pans; grease tops lightly.  Cover; let rise until doubled, about 45 minutes.

    Preheat oven to 375°F. Bake 40 to 45 minutes or until loaves sound hollow when lightly tapped.  Remove from pans; cool completely on a wire rack.
