Walnut Onion Bread

2 cups milk
3/4 cup finely chopped onion
1/2 cup butter or margarine
2 tablespoons honey
2 teaspoons salt
2 packages dry yeast
5 to 6 cups flour
3/4 cup chopped walnuts, toasted
vegetable oil cooking spray

In a small saucepan, combine milk, onion, butter, honey and salt. Cook over medium heat until butter melts. Let mixture cool to between 100-110ºF. Dissolve yeast in warm milk mixture.
In a large bowl, combine 5 cups of flour and yeast mixture; stir until a soft dough forms. Turn dough onto a lightly floured suface. Knead about 5 minutes or until dough becomes smooth and elastic, using additional flour as needed. Knead in walnuts.
Place dough in a large bowl sprayed with cookign spray, turning once to coat top of dough. Cover and let rise in a warm place (80-85 degrees) for 45 minutes or until doubled in size. turn dough onto a lightly floured surface and punch down. Divide dough into thirds. Shape each third into a 5" round loaf. Place on 2 lightly greased baking sheets. Spray tops of dough with cooking spray, cover, and let rise in a warm place for 20-25 minutes or until doubled in size.
Preheat oven to 375ºF. Lightly brush each loaf with egg whites. Using a sharp knife, score top of each loaf with an "X". Bake for 22-25 minutes, or until bread is golden brown and sounds hollow when tapped. Serve warm or transfer to a wire rack to cool completely. Stoe in an airtight container. Makes three 8-inch round loaves.
