    Parmesan Bread Pudding with Tomatoes & Artichokes

    List of Ingredients

    12 thin slices crusty french bread (1/4" thick)
    6 eggs
    1 cup half and half
    1/2 cup grated parmesan cheese
    1/4 cup chopped chives
    salt and pepper to taste
    1 jar marinated artichoke hearts, drain and -- coarsely chopped
    2 medium tomatoes, peeled, seeded and thin sliced
    2 tablespoons grated parmesan cheese

    Recipe

    Prepare bread by toasting lightly at 350ºF for 10 minutes, or until crisped, then break bread into small pieces. In a bowl, beat together eggs, half and half, parmesan, chives and seasoning. In a 10x3" round porcelain baker, layer half the bread, half the egg mixture, artichokes and remaining bread. Pour remaining egg mixture over the bread and set tomato slices evenly on top. Sprinkle top with grated parmesan. Bake at 350ºF for about 40-45 minutes or until puffed and golden. Serves 6.
