    Sausage and Rice Brunch Casserole

    List of Ingredients

    1 pound pork sausage
    3 cups hot cooked rice
    2 cups shredded sharp cheddar, divided
    1 can cream of mushroom soup
    1 4 ounces can sliced mushrooms, drained
    1/2 cup milk
    3 eggs, lightly beaten
    2 teaspoons creole mustard
    1/4 teaspoon onion powder

    Recipe

    Cook sausage in medium skillet over medium-high heat until well done; stir to crumble. Drain. Combine rice and 1 1/2 cups of the cheese in medium bowl. Spread evenly in buttered 12x8 inch baking dish. Sprinkle sausage over rice mixture. Combine remaining ingredients, except cheese, in small bowl. Pour over sausage. Sprinkle remaining 1/2 cup cheese over-top. Bake at 350ºF 40 to 45 minutes or until set.
