    6 cup Rolled oats old fashioned
    1 cup Sliced almonds
    1 cup Chopped candied walnuts (or chopped pecans)
    3/4 cup Unsweetened shredded coconut
    1/3 cup Ground flaxseed meal
    1/4 cup Butter melted
    1/2 cup oil
    2 teaspoon vanilla
    1/2 teaspoon Almond extract
    Cinnamon to taste
    1/4 cup Brown sugar splenda (or regular)

    Preheat oven to 250 degrees. In a large bowl mix up the oats, nuts, coconut and flaxseed meal. In a microwave safe container combine the butter and oil, along with extracts and seasonings. Heat in microwave until butter melts. Stir in brown sugar. Pour this liquid mixture over the oat mixture and stir up well. Spread 1/2 onto a cookie sheet coated in foil. Bake for 1 hr and 15 min, stirring every 15 min.

    Once first pan is cool, spread rest of mixture into pan and bake in the same way. Allow granola to cool completely, and then if desired stir in some dried fruits (like dried berries, raisins, chopped dates, etc.)
