Baked Oatmeal

List of Ingredients
3 cups oatmeal
1/2 c. brown sugar -- (1/2 to 1)
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup applesauce
1 teaspoon vanilla
2 eggs
1 cup rice milk
1/2 cup blueberries or raisins -- (1/2 to 1)
Recipe
Preheat oven to 350�F. Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Stir the wet and dry ingredients together and add the raisins or blueberries. Spread in a 9x9 pan, lightly sprayed with nonstick spray. Bake 20-30 minutes. Serve as-is, or top with some sort of milk. Notes: This turns out almost like a cake. Can use egg substitute with good results, and rice milk.
