1/4 cup honey
1/4 cup barley malt syrup or honey
1/4 cup mixed fruit juice concentrate
5 cups rolled oats (not instant)
1 cup raisins
Recipe
Heat oven to 350ºF. In large saucepan, combine honey, syrup, and fruit juice concentrate. Heat over med heat until you can stir mixture easily, but before it starts to boil, about 5 minutes. Place oats in large mixing bowl. Add honey mixture and stir rapidly and thoroughly to coat the oats. Spread the oats in a thin, even layer on a large nonstick baking sheet. Place in oven and bake until granola is crisp, no more than 15 minutes. Watch carefully or may burn. Let granola cool thoroughly on baking sheet.
Place granola in large bowl, breaking up any large chunks, and stir in raisins. Transfer to tightly covered container and store in cool place. Can use frozen apple juice concentrate, and add diced dried apples along with raisins. Can also add slivered almonds or chopped nuts, but only add 1/3 c. per recipe. Other options are adding in 1/4 c. shredded unsweetened coconut before baking, or adding in 1/2 c. wheat bran prior to cooking.
