Cinnamon Raisin Granola

1/2 cup corn syrup, divided into two 1/4-cup portions
2 tablespoons orange juice
1 teaspoon cinnamon
1 1/2 cups raisins
2 1/4 cups Quaker multi-grain oatmeal
Recipe
Preheat over to 325 degrees. Line a baking sheet or jellyroll pan with foil and lightly spray with nonfat cooking spray.
Combine 1/4 cup corn syrup, orange juice, cinnamon and raisins in a small saucepan and cook over medium heat, stirring frequently, until heated through. Spread oatmeal on the baking sheet. Pour remaining corn syrup over oatmeal and toss lightly until coated. Bake in preheated oven for 15 to 20 minutes until lightly browned.
Remove from oven; pour cooked fruit sauce over oatmeal and toss until coated. Spread mixture into even layer. Bake 20 to 25 minutes, stirring 3 or 4 times, until mixture is crisp and golden brown. Remove from oven and cool completely at room temperature; store in airtight container.
Substitute dried fruit for raisins or honey for corn syrup. Great in the morning mixed with 6 ounces of fat-free flavored yogurt or sprinkle 1/4 cup over fat-free frozen yogurt for dessert.
