    Fruited Barley & Rice Bake

    List of Ingredients

    3/4 cup raw long grain brown rice
    1/2 cup raw pearl barley
    1 cup chopped mixed dried fruits
    1/2 cup orange juice
    1 teaspoon grated orange peel
    2 teaspoons butter
    3/4 teaspoon salt
    1 cinnamon stick, broken in half

    Recipe

    Preheat oven to 350ºF. In a 2 quart baking dish, combine the rice, barley and dried fruits. In a saucepan, combine the orange juice, orange peel, butter, salt and cinnamon stick with 3 cups of water. Bring to a boil, stirring until the butter melts. Pour the liquid over the rice mixture, stir once with a fork, and cover the baking dish tightly with a sheet of foil. Bake in the preheated oven for 60-70 minutes, until the rice and barley are tender and the liquid is absorbed. Before serving, discard the cinnamon stick and fluff the casserole with a fork. Serves 4.
