1/4 cup cream of rice
1 cup apple juice
2 teaspoons light brown sugar
1 tablespoon diced dried apples
1 tablespoon chopped almonds, toasted
Recipe
In heavy saucepan, combine cereal, apple juice and brown sugar. Bring to boil over med high heat. Reduce heat to med low and simmer, stirring occasionally, until you have a thick porridge, about 10 minutes. Stir in dried apples. Serve hot, sprinkled with toasted almonds. To microwave: combine cereal and apple juice in 4c. Pyrex bowl. Cook on high until mixture boils, about 4 minutes. Stir, then return to microwave, stirring and cooking at 3-minutes. intervals until cooked, about 12 minutes. Stir in dried fruit and nuts.
