Homemade Crunchy Granola

2 1/2 cups uncooked rolled oats
1/2 cup unsweetened flaked coconut
1/2 cup unblanched almonds, sliced
1/4 cup raw untoasted sunflower seeds
1/4 cup honey
1/4 cup molasses
1/2 teaspoon ground cinnamon
1/2 cup golden raisins
1/2 cup chopped pitted dates
1 teaspoon vanilla
Recipe
Preheat oven to 325ºF. Spray a jelly roll pan with vegetable oil spray. In a large bowl, combine the oats, coconut, almonds and sunflower seeds. In a small bowl, blend the honey, molasses, and cinnamon with 3 tbl. of hot water. Pour the liquid mixture over the oat mixture, and use your clean hands or two spoons to combine the mixture until the dry ingredients are evenly coated with the honey-molasses mixture. Transfer to prepared baking sheet and spread into an even layer.
Bake in the preheated oven, stirring thoroughly every 5 minutes, until granola turns a rich, dark brown, 30-35 minutes. watch carefully during the last few minutes to make sure it doesn't burn. Remove from the oven, stir in raisins, dates and vanilla, and let cool completely. Granola will crisp as it cools. Transfer to airtight container and store at room temperature for up to 2 weeks.
