3/4 cup old fashioned oats
1 1/3 cups cold water
1 tablespoon maple syrup or honey

In an earthenware dish or heavy ovenproof casserole with tight-fitting lid, combine oatmeal, water, a pinch of salt and maple syrup, honey or brown sugar if using them. Cover tightly and place in 225ºF oven for 7 hours, or overnight, until the oatmeal reaches desired consistency.
