Plum Oatmeal

3 Fresh plums, pitted, chopped
1/4 c Raisins
2 c Apple juice
1 c (heaping) slow cooking oatmeal
1 t Cinnamon
1 t Dehydrated lemon peel
Recipe
Combine apple juice, plums, raisins, and cinnamon in a small pot and bring to a boil. Lower heat and simmer for 5 minutes. Stir in oatmeal and simmer until the juice is absorbed. cover and let rest for 1 minute. Serves 2-4. This is not real sweet so some of you may prefer to add some sugar or honey.
