Vanilla Granola

2 cups old fashioned oats
1/3 cup apple juice concentrate, thawed
2 tablespoons light brown sugar
1 tablespoon ground cinnamon
1 cup unsweetened flaked coconut
1 vanilla bean, split, seeds removed
1 cup dried sour cherries
1 cup golden raisins
Recipe
Preheat the oven to 300ºF. In a large bowl, place the first four ingredients, and toss well. Spread the granola onto a large cookie sheet and bake for 25 minutes, stirring occasionally. Stir in the coconut and vanilla seeds, and bake for another 20 to 25 minutes, until lightly browned. Stir in the cherries and raisins. Cool and store in an airtight container for up to 1 month.
