Crunchy Toasted Granola

1 package (6oz) Dried apricots ; cut into 1/4-inch pieces
1/2 cup Dried cranberries ; (sweetened)
2 tablespoons Light brown sugar
1 cup Hot water
1 teaspoon Vanilla extract
3 cups Rolled oats ; (not quick cooking)
1/2 cup Slivered almonds
1/2 cup Unsalted sunflower seeds
1/2 cup Roasted soy nuts
2 tablespoon Nonfat dry milk powder
1 teaspoon Ground cinnamon Recipe
Preheat oven to 250°F. In a medium bowl, combine apricots, cranberries and sugar. Add hot water and vanilla and let stand for 15 minutes. Meanwhile, combine remaining ingredients in a large bowl. Add apricot mixture and liquid to dry ingredients and mix well. Transfer mixture to a shallow roasting pan. Bake 1 hour and 30 minutes, stirring every 15 minutes, until oats are golden and crisp.
