Spiced Pear & Coconut Breakfast Couscous

1 cup apple juice
1 medium firm pear cored and chopped
1 tablespoon fresh lemon juice
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon ground cardamom
1/8 teaspoon grated nutmeg
1 cup raw couscous
3 tablespoons sweetened shredded coconut
2 cups skim milk warmedRecipe
In a large saucepan, combine apple juice, chopped pear, lemon juice, salt, cinnamon, cardamom, and nutmeg with 3/4 cup water. Bring to a boil, reduce heat to low, and cook, covered, until he pear becomes tender, about 5 minutes. Add the couscous, stir once with a fork, and remove the pan from the heat. Let stand until the couscous softens and absorbs the liquid, about 5 minutes. In a small skillet, toast the coconut over medium-low heat, stirring frequently, until pale golden, about 3 minutes. Spoon couscous into bowls, top with coconut, and serve with warmed milk. Serves 4.
