    Apple Cinnamon Walnut Pancakes

    List of Ingredients

    1 1/2 cups apple juice
    2 eggs, lightly beaten
    2 tablespoons tahini
    1 cup whole wheat pastry flour
    1/2 cup oat bran
    2 tablespoons wheat germ
    1 1/2 teaspoons baking powder
    1 teaspoon grated orange peel
    1/2 teaspoon cinnamon
    1/2 cup chopped walnuts

    Recipe

    In mixing bowl, blend together apple juice, eggs and tahini. In another bowl, stir together flour, bran, wheat germ, baking powder, orange peel, cinnamon and pinch of nutmeg. Add to the liquid ingredients with the walnuts, and stir til just combined. Batter should be lumpy. Use 1/4 c. batter per pancake; pour onto oiled griddle. When bubbly, turn and brown on other side. Makes 12 pancakes.
