Buckwheat Buttermilk Silver Dollar Pancakes

3/4 cup flour
1/4 cup buckwheat flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
1 tablespoon sugar
3 tablespoons oil
1 cup nonfat buttermilk
Recipe
Preheat pancake griddle or large, heavy frying pan. If pan is not well seasoned, coat lightly with nonstick cooking spray. Griddle will be hot enough when a drop of water dances on the surface. In a medium mixing bowl, whisk together the white and buckwheat flours, baking powder, baking soda, and salt.
In another medium bowl, whisk the egg whites until frothy, about 2 minutes. Whisk in the sugar, oil and buttermilk. Pour the milk mixture into the flour mixture and whisk just until blended.
Using about 1 tbl. batter for each pancake, spoon the batter into the pan. When the edges are dry and the bottoms are golden, turn the pancakes over and cook until they are lightly browned, 2-3 minutes total. Serve the pancakes hot, with syrup or jam. Serves 4, making 36 small pancakes.
