Giant Cornmeal Flapjacks

1 1/4 cups flour
1/2 cup cornmeal
2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 egg
3 tablespoons oil
2 tablespoons sugar
2 cups nonfat buttermilk

Preheat pancake griddle or heavy frying pan. Coat pan lightly with cooking spray. Griddle is hot enough when drop of water dances around on the surface.
In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt. In a medium bowl, whisk the egg with the oil and sugar until smooth. Whisk in the buttermilk. Pour milk mixture into flour mixture and whisk just until blended.
Using about 1/3 cup for each pancake, ladle the batter into the pan. When the edges of the pancake are dry and bottom is golden, turn it over and cook until the bottom is lightly browned, about 3-4 minutes total. Serve flapjacks hot, with syrup or other toppings. Serves 4-6.
